Vegan Gluten Free Monster Cookies
Easy, healthy vegan monster cookies that everyone will love! The perfect soft cookie with surprise bites of dark chocolate and a pop of colour using Unreal Dark Chocolate Crispy Gems.
Ingredients
- 1 flax egg (1 tbsp flax + 2.5 tbsp water)
- ⅓ cup peanut butter
- 1 tbsp maple syrup
- 1 tbsp coconut sugar
- 3 tbsp melted coconut oil
- 1 tsp vanilla extract
- 1 ½ cup almond flour
- 3 tbsp coconut flour
- ½ tsp baking powder
- ½ cup Unreal Dark Chocolate Crispy Gems
Instructions
- Preheat oven to 350°.
- Combine dry ingredients (except Unreal Dark Chocolate Crispy Gems).
- Combine wet ingredients.
- Gently gold in Unreal Dark Chocolate Crispy Gems.
- Divide the dough and roll into evenly sized balls. Flatten and shape the cookies.
- Bake at 350° for about 12-13 mins.
